March 19
Yesterday I was cooking in the kitchen and paused to look out into the dining room (I must admit, I like this open kitchen system!). What I saw there made my heart skip a beat, and my face break into a huge grin. The wait staff had, for the first time, donned their UST stripes and aprons, and were standing in an orderly (of course) circle around the room. I was so moved I had to go out and interrupt (Sumimasen!) to tell them how beautiful they looked!
Now, at UST, there is only one color shirt, which is nicely fitted, and has a lovely deep brown stripe on a white background. The shirt is set off smartly by a brown apron, with black trousers and shoes completing the ensemble. Japanese aprons, both kitchen and dining room, have wonderfully wide tie strings which knot up into a neat and impressive looking bow, once you’ve learned the technique. The outfits perfectly match the room as well.
Later on, I was speaking with one of the servers, and repeated my comments about how great they all looked. Further on in our conversation, I happened to mention that at USC, the servers’ shirts came in several different colors. I had to smile once again when she replied, “Is the color you wear determined by your ranking level?” |
