Carmen Quagliata
Executive Chef

At Union Square Cafe, with the Greenmarket at his doorstep, Carmen explores his passion for his native Italian cuisine in one of the country's most beloved restaurants. Carmen joined us in 2007, and previously worked with Michael Chiarello at Tra Vigne in Napa Valley, Lydia Bastianich at Felidia in New York, and Michael Romano, our opening Chef on 16th Street. Soon after reopening Union Square Cafe on 19th Street, Carmen and his team earned three stars from The New York Times.

Chris Nelson
General Manager

As General Manager of Union Square Cafe, Chris ensures the service team’s excellence and warm hospitality, for which the restaurant is so renowned. Chris first joined Union Square Hospitality Group in 2008 as a bartender at The Modern, and subsequently became a Sommelier, helping the restaurant to earn a James Beard Award for Outstanding Wine Service. In 2012, Chris became Wine Director of Union Square Cafe, before being promoted to Assistant General Manager, and General Manager.

Amanda Wilson
Chef de Cuisine

Amanda, our Chef de Cuisine, oversees the restaurant’s daily culinary operations and leads a team of 40 cooks. She joined us on 16th Street in 2010 after working at Annisa and Ammos Estiatorio, and spent some time away from New York, pursuing her passion for farm-to-table cooking in several acclaimed kitchens in California. Amanda grew up in Hong Kong and Connecticut, and studied business before pursuing a degree at the Institute of Culinary Education.

Daniel Alvarez
Pastry Chef

Daniel is the Pastry Chef of Union Square Cafe and Daily Provisions next door, overseeing bread and pastry programs at both restaurants. Daniel joined Union Square Hospitality Group in 2014 as a Pastry Sous Chef at Gramercy Tavern, where he worked with Pastry Chef Miro Uskokovic. Earlier in his career, Daniel trained in the pastry kitchen of Jean Georges, and worked as Chef de Partie for Dominique Ansel Bakery during the development of the Cronut.

Jason Wagner
Wine Director

As Union Square Cafe’s Wine Director, Jason oversees the restaurant’s wine program with an emphasis on classic styles from Italy, France, and the United Sates. Previously, Jason was a Beverage Director and General Manager of downtown restaurant Fung Tu, and spent time working in Chicago and at the two Michelin-starred L’Atelier de Jöel Robuchon at The Four Seasons in New York. Jason holds certificates from the Court of Master Sommeliers and the American Sommelier Association.
