Carmen Quagliata
Executive Chef

At Union Square Cafe, with the Greenmarket at his doorstep, Carmen explores his passion for his native Italian cuisine in one of the country's most beloved restaurants. Carmen joined us in 2007, and previously worked with Michael Chiarello, Lydia Bastianich, and Michael Romano, our opening Chef.

Sam Lipp
Director of Operations

In 2011, Sam became the General Manager of Union Square Cafe, and Managing Partner in 2012, continuing the tradition of excellent service and warm hospitality that have made the restaurant one of New York's most beloved. Before joining us, Sam worked at Maialino and Eleven Madison Park.

Amanda Wilson
Chef de Cuisine

Amanda Wilson manages our day-to-day culinary operations and team of 40 cooks. She joined us in 2010 after stints at Annisa and Ammos, then spent three years working under Chef Carmen and two years cooking in California. In 2015, she returned to help us move to our new home on 19th St.

Jason Wagner
Wine Director

Jason Wagner is the Wine Director of Union Square Cafe. He brings more than ten years of experience in the hospitality industry, where he has held nearly every front-of-the-house position. While working in restaurants, Jason developed a passion for wine and service, which inspired him to secure certifications from both the American Sommelier Association and the Court of Master Sommeliers.

Prior to joining Union Square Hospitality Group, Jason was the Partner, General Manager and Beverage Director of Fung Tu in Manhattan’s Lower East Side. Under Jason’s leadership, the restaurant received Two Stars from The New York Times and became a downtown wine destination. Before Fung Tu, Jason worked as the Wine Director at both Henri and The Gage in Chicago, where he simultaneously managed high-volume and fine-dining wine programs.

Before Chicago, Jason worked as the Wine Director at the two Michelin-starred L’Atelier de Jöel Robuchon in the Four Seasons Hotel New York, where he managed a list of over 750 labels that span classic regions and vintages. When he is not at work, Jason enjoys playing music and spending time with his wife and son.

Chris Marcel
Bar Director

Chris Marcel is the Bar Director of Union Square Cafe and Daily Provisions. In his role he manages the restaurants’ team of baristas and bartenders and curates a diverse beverage menu that spans from single-origin coffee to specialty teas to craft cocktails to small batch beers.

Chris began working at Union Square Hospitality Group in 2009, and worked at Eleven Madison Park and Maialino before joining the team at Union Square Cafe in 2013. Chris holds degrees from Georgia State University and The Culinary Institute of America. Originally from Savannah, GA, Chris now lives in Williamsburg, Brooklyn.
