Roles at Union Square Cafe: Line Cook, Sous Chef, Chef de Cuisine
Currently the Executive Chef of Daily Provisions, Chef Amanda Wilson is the creator of the mouthwatering Bacon, Egg, and Cheese, Wake Up Sauce, and Ina Garten’s favorite roast chicken! Working at Union Square Cafe from 2010-2013, and again from 2015-2018, Chef Amanda quickly ascended from a Line Cook to Sous Chef and became Chef de Cuisine after returning from San Francisco where she worked at the 3-Michelin starred Quince. Chef Wilson was instrumental in our transition from 16th Street to our new home in 19th Street.
Favorite Union Square Cafe memory? “During the final week of Union Square Cafe at its original location, Chef Carmen Quagliata and I ran a special menu, and it felt like a celebration every night. That said, staffing was tight and Carmen and I found ourselves butchering squab until 2am. Sounds bad on paper, but we reminisced over old stories and laughed all night.” Close second: “Getting a 3-star review from The New York Times for the reopening at 19th St. That was pretty unreal.”
